Last night a made stew. It is not my favourite, I don't mind it but it is not on my top list. But Kal loves stew and since I love Kal, I make it for him. I decided to come up with my own recipe, now this may be an actual recipe but since I did not look at a cook book and thought it up in my head I am going with the thought that it is indeed original. Now I am not your regular go exactly by the recipe kind of gal, especially if we are talking measurements and amounts so if you are, my recipe will make you crazy. This was a huge success in the Bartel house, even Jackson ate it and he is major picky!
Amanda's In A Stew....... Preheat oven to 400 degrees
4 cups Stewing Beef diced medium sized
(I love Costco's stewing beef, you get lots of meat for your money and it will make like 5 meals)
Carrots
Potatoes
Onion
Other veggies if you like them , Turnip is always nice too.
Beef Broth
1 package Brown Gravy Mix
Corn Starch
Sprinkle and coat well the beef with Garlic Powder, Hy's Seasoning Salt, Montreal Steak Seasoning, Let sit while you prepare veggies. If you are really together you can do this the day before and let it sit over night!
Once veggies are cut put them in a roasting pan.
Drizzle a little olive oil into a frying pan let get hot over medium heat. Add your beef and brown until ,most pieces are brown and not totally bloody. DO NOT OVER BROWN!
Add beef to your veggies. Add 1 cup beef broth( I use EPICURE Beef Broth) and 1 package brown gravy mix, mix with 1 cup hot water. Stir veggies, beef and liquids all together and cover with lid or tin foil. Bake in the oven at 400 for 30 minutes, then turn down the oven to 325 for the remaining cooking time...about 2 hours. The last 15 minutes or so take off the lid or foil, stir mixture and add cornstarch mixed with cold water to thicken sauce. Put back in the oven to cook a little longer with out the lid or foil on top.
Feel free to add more broth or gravy if needed or wanted.
This is also super yummy with homemade fresh Whole Wheat Bread....when you have the time!
